Celeriac & Potato Rösti with Garlic Aioli (Ve)

Golden, crispy, and irresistibly tasty, this rösti is the ultimate plant-based comfort food. The subtle sweetness of celeriac and potatoes pairs beautifully with a zesty vegan garlic aioli, making it a dish that’s simple, satisfying and bursting with flavour.

Ingredients

For the rösti:

  • 1 medium celeriac, peeled and grated
  • 2 medium potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 tbsp plain flour
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 tbsp olive oil

For the garlic aioli:

  • 4 tbsp vegan mayo
  • 1 garlic clove, minced
  • 1 tsp lemon juice

Method

  1. Combine grated celeriac and potato in a clean tea towel and squeeze out excess water. Transfer to a bowl.
  2. Mix in the onion, flour, salt and pepper.
  3. Heat olive oil in a large frying pan over medium heat. Shape the mixture into patties and fry for 3-4 minutes on each side until golden brown.
  4. For the aioli, mix vegan mayo, minced garlic, and lemon juice in a small bowl.
  5. Serve the rösti hot with a dollop of garlic aioli.
